1tbspraisin - optional
Wet ingredients;
1large egg
1/4tspvanilla extract
1/2cupshredded carrot
(almond or other non-dairy milk) - only if the dough is too hard (*2)
Other
Coconut oil - to coat the waffle pan
Instructions
Generously coat your waffle make/pan with coconut oil.Do not skimp on the oil because you do not want to waste your waffle!
Combine all the dry ingredients in a medium size bowl making sure the all the "lumps" are gone. Combine all the dry ingredients in a medium size bowl making sure the all the "lumps" are gone.
Add in all the wet ingredients except for non-dairy milk and combine well.See the recipe note below (*2)
Transfer waffle batter to the waffle maker and cook about 2 minutes. It may require more or less time to cook depending on the waffle maker that you are using.
When the waffle is cooked, carefully lift the edge of waffle with a folk or a chopstick and transfer to your plate.
Enjoy this healthy carrot cake waffle with almond butter or/ and a drizzle of maple syrup!
Notes
*1) I used cinnamon, nutmeg and clove to add the "carrot cake" flavor to this waffle with the ratio of (roughly) 4:1:1, total of 1/2 tsp. You can use more or less spices or/and add other spices if you like. Ginger and cardamon would work great too (but do not leave the cinnamon out!)*2) Depending on the size of an egg or moisture content of the carrot you use, the waffle dough may become too hard (meaning too dry). In this case, add non-dairy milk a tsp at a time until you get the right consistency.
